Temps is a guideline for tuning and used in conjunction with other factors like how much smoke, what performance and what teh motor sounds like.
usual safe temp is from 200 - 250 deg/f .

This is a good one but again its just to understand the basics and you will start to understand the tuning concept after trial and error.
Most important though is when in doubt go back to basics and factory settings and dont be afraid to ask questions.
